Mezzelune Cheese
Mezzelune pasta sort of resembles a potsticker, but it’s a little flatter. It’s a hand-rolled pasta that starts flat. It’s cut into ovals that are then stuffed, folded in half, and have pinched edges to seal it shut before boiling. The dough is usually made of white flour or buckwheat flour, durum semolina, mixed with eggs and olive oil. Typical fillings may include cheese (such as ricotta, quark, mozzarella, or Bitto), spinach, or mushrooms (e.g., porcini, chanterelles, champignons). The dish may be served with mushroom or pesto sauce, with salsiccia, with seafood, and/or with cherry tomatoes.

Count about 200 grams of Mezzelune per person. 1. Bring 1L of water to the boil per 200 grams of pasta. 2. Slide into the water and bring the water to the boil again, stirring occasionally. 3. Boil the Mezzelune for about 2 minutes, from when they start to float. 4. Drain and serve.

How long can I store it for? Can I freeze it?
Our pasta can be kept in the fridge for 3 day after delivery. So, if your pasta is delivered on a Monday it should be consumed by the end of Thursday.
Alternatively, freeze your pasta on the day of delivery for up to two months. Your recipe card will include details on how to defrost your dishes safely. As general guidelines, to prepare frozen fresh pasta, cook directly from frozen and allow slightly longer (usually around 1-2 minutes more) in the boiling water.
